Traditionally burrata is a fresh Italian cow milk cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture. What makes the one we use here at Vice and Virtues so unique is it is made using buffalo milk.

Lucy Appleton from Wairiri Buffalo takes care of our Burrata needs. "You can be sure of its freshness as it is made to order and delivered within 24 hours of production. Sometimes it's delivered in the afternoon so your guests can enjoy it later that evening". That's what makes it taste amazing.

And Lucy tells us we're one of the few people serving it during the winter. So pop in out of the cold and visit us here at Vices and Virtues. You can sit in our warm restaurant while you enjoy the Wairiri Buffalo Burrata, its served with mixed heritage tomatoes, salanova leaves, dried olive crumbs & mango nam phrik.
