There are three elements to this great breakfast – toast, berry compote and mascarpone cream. And if you make the cream and compote in advance, all you will need to do in the morning is make the toast.

1. The berry compote
Ingredients:
- 1 cup frozen mix berries
- 1 cup caster sugar
Cook the berries and sugar in a pan on medium heat until the mixture is reduced to 3/4 of its original volume. Take off heat and leave until needed.
Tip: Keep the compote smooth and runny. Overcooking will make it thick and jam-like.
2. The cinnamon mascarpone
Ingredients:
- ¼ tsp cinnamon powder
- 100 gm mascarpone cream
- 2 tbsp sugar caster
Mix above ingredients in a bowl. Keep refrigerated until needed.
3. The Toast
Ingredients for French toast:
- 2 eggs
- 40 ml milk
- 1/5 tsp cinnamon powder
- 25 ml orange juice (optional)
- 4 slices of bread (we normally use a brioche but white bread will work too)
- 1 tsp butter
Whisk the egg, milk, cinnamon and orange juice in a bowl until all ingredients are well combined. Cut bread slices into triangles and soak in the mixture for 30 seconds. Tip: Soak for longer if you want a more intense flavour.
Heat a non-stick pan, add butter and once the butter is foaming, add your sliced bread.
Cook both sides until golden brown in colour.
Serve with the mascarpone cream and berry compote.
